Artisan Breads
Made
fresh daily from water, yeast, salt and flours that
are not bleached or bromated. NO PRESERVATIVES!
Our Head Baker, Luis Uroza, is "the man no one ever sees." That's because he starts mixing dough and baking after midnight and works through the wee hours of the morning so that our customers have made-fresh breads and breakfast pastries available for purchase every day.
Four basic ingredients comprise our artisan breads: water, yeast, salt, and flour. The Village Bakery uses flours that are not bleached or bromated and that are milled specifically for artisan bakers. There are no preservatives in our artisan breads!
Some of the breads we produce include our signature bread, ciabatta; baguettes; savory breads such as bacon, black olive, blue cheese-walnut, garlic, onion, sun-dried tomatoes and parmesan/provolone; and grain breads such as multigrain, rye with caraway, cranberry-raisin-walnut, and seven-grain. Every week we bake our breads on a rotating schedule. A variety of artisan dinner rolls are made every day, so please call ahead for each day's offerings.
What
does Artisan Mean Anyway?
The Village Bakery's definition of "Artisan" bread is
the art and science of making and baking bread
by hand,
on the premises, with the basic elements of unbromated,
unbleached, and unrefined flour, salt and water.
Types of Bread
Baguette
The traditional French "daily" bread. Usually 2 feet in length, 4 inches in diameter, it has a soft, fine crumbed interior surrounded by a crispy, brown crust. The Village Bakery offers plain, sourdough, and garlic baguettes. We also produce demi- or "half-" baguettes that are perfect for sandwiches. (By order only)
Batard
A batard is shorter and fatter than a baguette. It's perfect for sandwich-making. The Village Bakery offers a parmesan, black olive, multigrain batard, cranberry-raisin-walnut batard, olive oil batard and parmesan-provolone batard.
Boule
A medium-sized, round French bread with a particularly crusty exterior. The Village Bakery offers a sourdough, seedless rye boule, whole wheat boule, bacon boule and sourdough boule. Perfect for picnics and special occasions, including soup terrines and dip bowls.
Ciabatta - Our signature bread at The Village Bakery
Like the baguette is to France, so some argue that the ciabatta – which means “slipper” in Italian -- is to Italy. Either an oval or rectangular loaf, a ciabatta is slightly flattish with a crusty exterior and a chewy, open crumb. Ciabatta is perfect for dipping in seasoned oils, as an accompaniment to any Italian dish, and for making a more rustic bruschetta. The Village Bakery offers ciabatta loaves, as well as ciabatta dinner, hamburger, and dinner rolls.
Focaccia
Often referred to as an Italian country flat bread, focaccia can be round or square in shape. It has olive oil kneaded into the basic dough, and is then liberally brushed with olive oil before baking. It can be topped with sea salt, herbs, onions, proscuitto, tomatoes or cheese. The Village Bakery offers plain and tomato-basil focaccia. Custom variations are available. Great for sandwiches too. Special Order only.
Fougasse
A cousin of focaccia, this French medium- to large-sized flat bread has distinctive deep cuts representing branches of a tree, cogwheels, or even the grate of a fireplace. This is a savory bread that is a perfect accompaniment to soups and salads. When sliced into thin pieces, placed on a baking sheet, seasoned with olive oil, salt and pepper, and then baked for about twenty minutes, it makes a wonderful crostini. The Village Bakery is well-known for its blue-cheese walnut fougasse and caramelized onion Fougasse.
Pullman or Pan Bread
The term "pullman" refers to the shape of mid-20th century railroad cars of the same name, while the term "pan bread" refers to the pans in which these breads are baked. Regardless of the name, these breads present a soft exterior and uniform rectangular shape. The Village Bakery offers pumpernickel, cinnamon swirl, and brioche, with the latter two being perfect for breakfast toast or French toast. Available in large or small.
Rolls
The Village Bakery offers a variety of rolls, including plain, black olive, Ciabatta, multi-grain, cran-rai-wal, black olive, pumpernickel, and snowflake.
