Chef Karen CaricatureKaren's Tips

Artisan BreadsStoring Artisan Bread

Wrap your bread in plastic wrap. Do NOT refrigerate. Keep at room temperature for up to 2 days. Otherwise, FREEZE bread whole or in slices (wrapped in plastic). Remove 1 hour or more from freezer; leave at room temperature with plastic on the bread. Remove plastic and bake for 10 minutes at 400° to crisp the crust back up. Eat immediately.

Storing Artisan Cookies

Artisan CookiesTransfer cookies to an airtight container immediately or wrap your baker's box in plastic wrap. If you aren't eating the cookies right away, store your container in the freezer. Remove from freezer one hour before eating. If the humidity level is high (e.g. summer time and rainy days), your cookies will soften no matter how well they are wrapped, but they are NOT stale. Don't throw them away. Simply put them on a cookie sheet or baking pan and bake at 300° for 8 to 10 minutes. Then cool. They will be crisp and yummy once again. You can do this up to 3 times, if you haven't eaten them all by then!

An artisan is a trained craftsman employing labor-intensive, hands-on expertise to a produce a quality product. When applied to baked goods, artisanship means the freshest and finest ingredients, hand-selected and handmade individually or in small batches and baked with love and attention.
